Ingredients:

  • 4 pork chops, about 1-inch thick
  • 2 tablespoons Arizona Hatch spice blend
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Optional: Additional lime wedges and fresh cilantro for garnish

Instructions:

  • In a small bowl, mix the Arizona Hatch spice blend, olive oil, lime juice, and minced garlic to create a marinade.
  • Season the pork chops with salt and pepper, then rub the marinade over both sides. Let them marinate for at least 30 minutes in the refrigerator, or up to 2 hours for deeper flavor.
  • Preheat your grill to medium-high heat.
  • Grill the pork chops for 7-8 minutes on each side, or until they reach an internal temperature of 145°F (63°C) and have nice char marks.
  • Let the pork chops rest for a few minutes before serving. Garnish with lime wedges and fresh cilantro if desired.
